Servesafe Certificate Program
If you work in the food service industry you must be aware of the importance of serving food safely to the public. This class will help you apply safe food-handling practices, sanitation practices, and teach you how to train other food-handlers. Successful completion of this class and the examination satisfies the Stanislaus County Health Department's requirements for Health Permit holders. It is strongly recommended to pick up your class books read them in advance of the class at the Community Education office. The 8-hour class is designed for review only of your book, plus time to take the test. You will become certified if you pass the exam with a 75% or higher test score. The certificate is valid for 5 years. Pre-registration is required.

Beginning Cake Decorating
Sign up early as this is one of our most popular "cooking" classes. It always fills up! Have fun and be creative! Learn the basic way to bake a cake and the basics of cake decorating. This beginning class uses 1/2 of a sheet cake board to practice pressure and control techniques, borders, flowers and icing a cake. You will only be required to bring one cake on the 6th day of class. $12 materials fee for board & icing paid to instructor at first class.
Bring the following supplies to the first class: Decorating Tips #3, 4, 16, 30, 47, 67, 71, 80, 104, 136, 190 and 199; 2 couplings; 2 - 8" decorating bag, 1 - #7 flower nail; 1- Lily Flower Nail Set, 1 - washcloth, 1 cookie sheet and a zip lock bag.

Sizzlin' Fish - Grilled Salmon and Talapia
Learn to make delicious grilled fish from scratch using Salmon and Talapia. Our first flavor will use grilled ginger, garlic, onions, lemon grass and kaffir lime leaves with olive oil on salmon; for the second flavor we will use grilled fresh tomatoes, onions, garlic, teriyaki sauce and basil on Talapia. Fish will be served on jasmine steamed rice, along with garden salads.

The Kitchen As Your Friend!
Peggy Gardiner, a former manager of multi-million dollar estates will teach you how to cook simple, healthy, and inexpensive meals. At the first session you will learn how to casually entertain at home, menu planning, shopping lists, and how food should be stored. You will learn to prepare, roast, and eat, an old fashioned meat loaf. During the second session you will help prepare, roast, and eat a chicken, a delicious pasta salad, and toss a tasty salad. Learn what preparation can be done in advance and how. We will also discuss dishes, flatware, glasses, cooking pots, pans, small kitchen appliances and kitchen organization.

Make Your Own White Wine!
A Hands-On Course in Pilot Winery and Home Production of White Wine
Our initial pre-production meeting at the MJC Beckwith Ranch will provide an overview of the production processes and take the student into the vineyard to introduce the process of grape evaluation. Subsequent meeting times will be determined by production requirements such as grape maturity, length of fermentation, and settling times. Most meetings will occur on Saturday mornings; however some schedule flexibility is usually experienced in the wine making process - but the final product is always worth the effort!
